Oh my what a weekend, not in the went to a Rave, and flew to Europe for the day kind of way but in a I worked a lot and am so excited for the holiday next week kind of way ;).
There are about 117 things I have to share.
First, Friday night S and I grilled… and that means I chopped up a few peppers and she did all the rest of the work 😀
It was very dark by the time we got home and everything ready but it’s still pretty gorgeous. I can’t find my phone at the moment but I took my tofu slices (only two because I dropped one between the grates when I “helped”) and some peppers, an LC cheese wedge and a wrap and ate it like that. It was soooooo good. I’m a big fan of the taste of tofu itself, and while delicious marinated if it’s grilled (or fried, or well baked) I’m happy with it’s flavor.
Saturday was busy busy at school, again, and I never took pictures but I had PB Puffins with soymilk, grilled cheese and french fries, and cookie dough ice cream for dinner. Now, ice cream for dinner is generally a bad idea but since my mother told me last week that she had ice cream for lunch and when I jokingly chastised her, she said it was okay once in awhile so I went for it. It ended up working in my favor because I dreamed up a recipe that I will be making for tomorrow nights dinner of real, wholesome food. Apparently, my body craves those things as much as sugary, sweetness. Good stuff.
Today, was another day at school but a very short one! S’s classroom looks great in my humble opinion. Not only is it cute, and functional, but it’s really cool to see how in tune S is with her (future) students because she considered everything before laying out the space (like where the desks should face to minimize distractions from other areas in the room, to other people in the hallways). Yea!
I’ve been waking up with stomach aches which is actually pretty normal for me, but instead of lasting a half hour or so, they’ve lasted much longer which has made breakfast difficult. I think it’s because I’m eating dinner too late, but thankfully a routine starts tomorrow so that should work itself out. So, this morning all I could manage, two hours after getting up mind you, was a PB Clif Z Bar. Then I had a late lunch so there will be no dinner tonight, maybe a snack. Weird.
I’ve also been avoiding the scale since I quit my job because my eating has been entirely different- different cooks, different schedule, etc. Even when I make something for myself I’m not as obsessed as I was and measuring everything all the time, no matter what. Today, I stepped on because I unpacked it and wanted to put it in my bathroom, and it was a pound less than the last time, this at around 9pm so I think I’m a-ok. So, since tomorrow I want to get into a good routine, since school (work) and school (my education) start on the same day, I figured that tomorrow would be a good day to set up my gym routine as well (yay! for apartment complex free gyms!). I think when I get there along with getting into a pretty set routine with my meals everything will start back on it’s way down (as in the digital numbers that pop onto my scale every week or so!).
