Hey lovebugs,

Today has been a bit hectic.  Wait! No! That’s normal over here.

Business as usual, I guess.

This morning, I decided to listen to my body and slept in a few extra minutes (or a half hour but whose counting).  That meant that I had to adjust a bit but sometimes it’s worth it.  I don’t know why sleeping away the time where I usually do yoga/meditate always makes my morning more rushed.  It’s weird.

I packed a breakfast that I ate between buses.

Banana and a Pure bar.  This apple cinnamon flavor was definitely tasty but really sweet.  My jaw hurt halfway through it which was strange because it usually takes a third large brownie to do that to me.  I was hungry though so I finished it, but next time I’ll have half for a lunch dessert and be a very happy camper 🙂

Underneath my breakfast items is my to do list for the day. It goes to the other side of the page! Yowza! Thankfully, I’m checking my way through it, although I wish I could have someone else check off some of the items for me.  Anyone interested in some Computer Forensics labs? No? Oh well, I actually like it so we can still be friends 😉

Lunch really isn’t worth mentioning but I had a small pita stuffed with plain ole tuna, a blueberry yogurt and baby carrots.  Healthy? Yessir. Satisfying? Suprisingly enough, yes!

Dinner is fabulous. Mini frittatas and roasted potatoes! Mmmmm

This is beyond simple.

Mini Frittatas
serves 1
1/4 cup grated cheddar
2 eggs
hot sauce, to taste
salt and pepper

Preheat oven to 375F. Grease three muffin tins (I used whipped butter tonight but use what works for you).  Divide cheddar equally among the prepared tins.  Beat egg, add S+P and divide equally between the tins.  Bake for 10-12 minutes.

The more fun version uses sauteed mushrooms and peppers and all that deliciousness.  This is a basic recipe so play with it! The best part is that you just dump the add-ins into the tins and top with the beaten egg. Easy! (Note: If you do this you might want to fill up four tins since the bulk from the veggies will equal more little minis).

The more frugal version use whole eggs and grate your own cheese, and chop your own veggies. Use what’s on sale that week!

The faster version use eggs from a carton, pre-grated cheese and pre-chopped veggies.  Although, the hands-on time commitment is so minimal I wouldn’t choose this option.

For the roasted red potatoes.  I just quickly rinsed and chopped them, sprayed them with EVOO, sprinkled with S+P and put into three of the empty muffin tins. Remember, the smaller the chop the quicker they’ll roast and they won’t be in there long so keep that in mind!

Dinner in 20 minutes, including prep time? Dinner that only uses four dishes to prepare (muffin tin, bowl for eggs, fork/whisk, and a knife)? Dinner that I could easily make for two without any extra effort? Works for me!  Now, I just regret not making more.  I imagine that the frittatas would heat up nicely in the microwave the next day (I’d wrap it in a paper towel) so next time I’ll be doing that!

Okay, I picked posting over homework tonight- in the order of events, I’m not going to skip an assignment, of course! So… I must go off to schoolwork land. Later loves.

Hey friends… it’s pretty hectic over here Chez Rebeca.  I don’t know how to explain it but I don’t like doing things halfway.  Which means that I make lots of lists and lately my own education has been at the top of that list (and rightfully so).  Unfortunately, that means after hours of reading, writing and messing around with other people’s computers (my minor is in Information Systems which is heavily PC and I don’t own one, so I mess around on other peoples :mrgreen:) I have little left for my blog.

I have these fab plans with a fellow blogger though that I can’t wait to share with you!

Meanwhile, I’m jumping on a couple of bandwagons.

First, I’m making study/index cards for my classes.  Say what? I haven’t done that since way back in my AP/IB days.  No wonder I had that killer GPA 😉  In all seriousness though, I know that it helps but usually I’m hesitant to “waste” paper and it takes quite a bit of time… but my computer class tests are HARD and I think these will help with the ton of memorization (my upper level Child Development/Education classes are so different!).  Note: I’m the “ill” studier I just changed my style to fit my schedule and I think I need to change my schedule to fit my style!

Second, I finally tried Honey Sunshine.

Kashi sent out free samples for signing up for something (I don’t remember what :oops:).  It was okay.  I think I was expecting something different.  It’d certainly be a fun “base” cereal since it’s low calorie but sweeter than most of my “bases.”

Third, I made a meal plan for the week.  I checked out sales, my cookbooks and thought up some yummy meals for the week that will make it easier (I hope to make healthy choices- a big struggle lately).

I have tried and failed many times to meal plan and where I fail is restricting the days and “overplanning” (the story of my life).  This week I just picked the right number of meals for each “category” and then left things open.  I have yogurts, veggies and fruit to go along with the meals so I can go based on my mood but still have guidelines to help.  I’m pretty excited about all the items on my list actually and it’s exciting to see what I’ll actually pick (at least for me it is :)).

Oh… there it is. My goodness, this started my day on a positive note.  I don’t know who started it but try it.  It made the loss of my jar of Dark Chocolate Dreams much more bearable.  In fact, I only cried for 10 minutes 😉

Hey y’all…

I’ve rescheduled my entire life.  Well, at least I’m trying to.  A lot of my worries have been eased and while I still have some things to figure out, things are much better over here 😀

So… in keeping with my new attitude and my commitment to do the things that I love along with the things that I just “have to do” I’m going to commit to food blogging again.  Mainly for me.  It definitely stabilizes me and it certainly ups the quality of my eats… sorta 😉

I’ve been battling some illness so I had a liquid breakfast

A nice mug of Yogi Throat Comfort Tea which has been my saving grace this weekend… Normally, I skip sweetener but I know that honey is actually really good for sore throats plus it made the 10-12 cups a day much more interesting.

The second part included this really cool powder I was sent.  Macrolife Naturals is a line of food supplement powders and bars.  I know a lot of people are “anti-powders” but I’m a fan.  Last year, when I was a nanny and was home all day I had time to make sure I was covering all my nutritional bases.  Now, that’s not really feasible because I’m out of the house and chasing five year olds seven hours a day.  This helps me meet my nutritional needs without much thought.

Anyway, it comes in two varieties and this Macrolife Reds is fab-u-lous.  I popped it into the blender with half a frozen banana and some vanilla soymilk.  It tasted similar to strawberry banana but not quite (I’m so eloquent, no?).  I actually hate strawberry banana but I liked this because it wasn’t quite that.  It was berry banana more accurately which I like! A lot!

Obviously, there was some (soy) milky unsweetened coffee to go.  Obviously.

A Panera “Bogel” was also consumed.  Cinnamon Krunch.  I have no idea where the other five went.  None.

Lunch was kind of thrown together. A nice sized salad with romaine, tomatoes, red onion, olives and feta. Oh, and some yummy Greek Dressing.  This is by far my favorite version of salad.  Simple and delicious. Next time, remind me to add capers, k?

Along with that I had another Macrolife product- one of the bars.  Chocolate Cinnamon. Honestly, this isn’t my favorite combination of flavors.  Chocolate alone would have been grand.  I do love that this is a raw bar and that the first ingredients are brazil nuts (yum) and date paste.  It’s not a Larabar but that’s not necessarily a bad thing.  There are some other flavors that are more on my radar- Apple Lemon and Berri Berri are great.  Especially, Berri Berri.

Would I buy these bars and the powder? Honestly, it’s out of my price range.  A three month supply of the powder is $100.00.  That comes out to a dollar a day and believe me I think that health is priceless.  The bars are ~$32.00 for a pack of 12.  That’s almost 3 dollars each.    I did feel really good today.  Significantly better than I did over the last four days that I spent mainly lying around blowing my nose… The feelings could be related to that but maybe the sheer amount of healthy supplements in these products that bombarded my body with what it needed to heal.  Who knows.  I think further research is necessary.

I had an appointment today- good news I don’t have H1N1… for all the concerned parties out there… and if you are sick… go to the doctor better safe than sorry… even if it’s just a cold, you don’t want to share those germs with those around you… Believe me then you’ll feel awful.

By the time I got home, I had a serious craving out of nowhere (actually it’s from a Psych commercial, ten points if you know the one ;).

Don’t hate. Baked (formerly frozen) fries and some grated Organic Valley Colby cheese.  Mmm. Perfection.  Actually, even though my tummy was full I wasn’t satisfied.  That finger food doesn’t work for me.  I must say though that I think that was the second time in life I had cheese fries (okay third?) I totally see the love.  Yum. (Salad plate- obvi).

I decided to put all that carby goodness to use and went for a treadmill run (so I could get some major reading) done… 40 minutes of that, followed by a quick cooldown on the stationary bike (mostly just so I could finish the chapter!).

I feel great tonight.  I’m not sure what it is but I had a great day… My attitude has definitely shifted and though I have a lot on my plate there are those who have a lot less than I do and I am thankful to be so fortunate.  I got a killer afterschool job that’s just an hour and half which makes my impending move and rent increase (worth it for a bigger place) much more feasible AND I’m loving my classes which makes all the reading and assignments enjoyable.  Gotta love it.  Oh and I got two new students today which splits our class pretty evenly among those lovely strong personalities and the more mellow (read: don’t scream in the hallways) crowd.  I figure that in the next month or so the strong personalities will duke it out and instead of competing will learn how to work together 🙂

Ok… I’m still a little gross in need of a shower and to prep my lunch for tomorrow. Night loves.

I’ve had a strange couple of days- hence no posting. I’m also swamped with work so let’s see if we can get this done, ay?

Friday

I got up and had a camera shy cup of coffee. It really made for a great morning, don’t ask me why, because I don’t know.

Then at school, I had what has become standard.

The (blurry?) smiley face. Those were the last eggs. Good thing eggs are my favorite or I’d be ready to throw some at someone 🙂

School was even better than usual because 8 students were absent. It doesn’t matter how much you love your students it’s still nice when you have a smaller class- so peaceful. I think we all had a great day even though we missed our amigos.

I tried to think of what to have for lunch on my way home. This is what I came up with.

Yes, it’s on the very messy cutting board because that’s where I served and ate it, standing right by my sink. I’m classy.

Then I crashed like never before. I fell asleep until 1:30am which was great because I was averaging 3.5-4 hours a night last week. It was bad because I had an assignment due at 1:00am that wasn’t completed. I thought I was just taking a nap and would wake up much earlier. I’m pretty disappointed about that but I’m trying to let it go because it’s not something I can change, so why dwell on it.

Then I stayed awake and finally fell back asleep at 6:30am.

Saturday

I woke up at around 11, did what I do every morning (call my mom for a chat) and did a little ‘to-do list’ making and blog reading.

I saw the lovely Anne’s oatmeal and started craving some so badly! (and she got a her own domain today! yay!)

I used this Organic 6 grain (with Flaxseed) my mom got me a while ago to make my bowl of cereal.

I used my standard thinly sliced banana in there plus 3/4 cup of unsweetened vanilla almond milk.

It was the best bowl I’ve had in ages. Sometimes simple is food is the best. It reminded me why I love this kind of breakfast so much.

For lunch, I made something up.

Blah, I hate frozen meals but it was in the freezer and needed to be eaten. Remind me not to buy something even when I can use my bargain hunting skills to get it for pennies, ok?

Then I went to bed at a decent hour…. and slept. The weekends always put me back on track.

Sunday

Mmm, I woke up kind of late again (as in past the time I have to be at work). I love it when that happens! Next week, I can wake up at the time everyday! Yesssss!

The thing with me and oatmeal breakfasts is that once I remember how much I love them, they happen again and again.

I missed the banana in it. I don’t know why I thought I could do without it! Still good though, just not as deliciously sweet throughout.

I did major work on my huge paper between breakfast and lunch.

I did more major work after this. I’m actually quite impressed with myself. I don’t usually focus for this long. I guess I work best with a deadline.

Dinner was simple and fast because I was on a roll.

I realized there were a lot of bowls in my day (well the same bowl, just washed between meals actually). So, I had dinner on a plate.

Smushed (a far too complicated to explain cooking technique) avocado, diced tomatoes and green peppers. I was supposed to add broccoli slaw but didn’t really plan well and it was too full to add anything else. So delicious though. I squeezed lime juice over the veggies.

I just finished my final paper for History (entitled the real casualty of the Cold War, the American childhood). I just have to post something about some Cold War era songs tomorrow and I’m done with that class! Finally! Hopefully, I don’t lose anymore than 5 points on the paper so I can get an A in that class. Had I done that assignment on Friday instead of sleeping that wouldn’t be an issue 😳 Oh well. C’est la vie. I needed the sleep.

When I started this I was angry and upset at someone who lied to me, even though they think I don’t realize it, and I was going to put them on blast, but after reviewing my weekend I have much more to be thankful and happy for than to be upset about. So I won’t dwell on something that probably doesn’t matter in the long run. Instead, I’ll pat myself on the back for having arguably the healthiest eating weekend in the past few months, if not year. (Weekends tend to be either junk food filled or severely lacking in food due to some neuroses on my part). this weekend was soooo good on that front. Definitely a victory.

I hope everyone else had great weekends as well… oh snap!, I’m about to head to my google reader and find out!

Did anyone watch Da Ali G Show? I’ve seen every single episode- Sacha Baron Cohen is so funny, and I can’t wait to see the Bruno movie! I’ve been in love with him for years 😉 Actually, I was more of an Ali G lover than Borat or Bruno but they’re all quality.

I skipped posting in favor of sleep last night, but frankly, I’ve been averaging 1.5 hours a night this week and despite trying I just couldn’t get to sleep. The sad thing is that I take a short nap (30-40 mins) to recharge so I can make it through the day without getting sick but that means that I can’t actually sleep later on. It’s a vicious cycle but hopefully the weekend will correct it!

Summer camp was its usual fabulous self the last two days. Not too many insects but lots of traditional stories ooo and a field trip tomorrow! It should be exciting and it’ll be nice to have lunch at a normal hour since we’re all eating together there. I packed a lunch for myself and two extras because I know how some kids will have a lot of nothing tomorrow. Lackluster parents at times.

Schoolwork has been kicking my butt lately. I actually have a lot of work to do still (like finish reading a book) but I need to post to feel complete.

My August plans are incredible, I think you guys are going to love this! It may need to become an annual thing too, since August is my ‘down’ month. We’ll see, next year I could be in the middle of nowhere doing something random with the way my life seems to go (but I like it like that!).

Okay, onto the eats. Please bear with me because there are definitely some gaps but rest assured I’m eating just don’t want to give anything away.

Wednesday

Yogurt + Trail Mix. It doesn’t look like much, but there’s a ton of trail mix in there. I loved it kept my stomach happy which can be hard when I’m tired.

Carrot, Celery, Romaine. Disgusting looking, delicious tasting. I could feel the vitamins coursing through me (hah!). It did give my brain the energy it needed to work work work.

Thursday

I woke up and for some reason was just about 7 minutes behind where I needed to be. I don’t know where the 7 minutes went but I ended up needing a grab and go breakfast-

Kashi Chocolate Caramel and a kiwi. I really need to hit the grocery store now since I just used the last of my fruit for this and the last of my veggies went into my lunch tomorrow! Eek!

Lunch was eaten as I tried to stay awake when I got home- hungry plus exhausted is not a good combination for me. Good thing I live alone and can yell at my counter for getting in my way and not a person 😛

I was cranky but this was delicious and brightened my mood! More trail mix + yogurt. I love this because there’s a ton of protein in it, it’s fast, and I love anything with texture contrast!

Then I took a short nap. I wanted it to last longer but I woke up on my own. I’ve finally perfected the art of taking a nap and not falling into a deep multiple hour sleep right when I need to actually do that. What a joy!

It was okay. It smelled a little strange but all food coming out of my microwave does ever since I had that mini fire in there. It tasted pretty good though, I loved how fresh-tasting the vegetables were! I wouldn’t buy this particular flavor again but some of the others look good!

Alright, I’m off to sleep… or read whichever happens. Night loves!

Ahh, good ole Dr. Seuss is so fab and I love that musical but not nearly as much as the Wiz (oh MJ :(().

In my non-sleeping time this morning, I was dreaming of PB2.

Even though I originally wanted to have my first PB2 experience in a K parfait but this morning I was in too much of a daze for thoughts… so I just threw some in a smoothie.

Along with that delicious powder, I had a frozen banana, organic skim and that other chocolate yogurt.  Twas so good an peanutbuttery.  Love love love!  Thanks Cammy!  I won it from her fab blog, yay!

I felt awful on the way home from school.  Obviously, I need to get back to my juice because I cannot experience that again.  Yuck!  (I’m attributing it to the switch from pure enzymes and vitamins and all that jazz to a bunch of protein and I know I’m protein-sensitive).  I ended up feeling better after a liter of water and some fresh air walking before entering the building.

I came home with a huge appetite.  So I made a lunch to match.

Started with a spinach salad with loads of strawberry slices and some cucumbers.

Along with the cucumbers that are lining the side of the bowl, I had adult carrots and celery dipped in Artichoke Kalamata Hummus… yum!

Then I moved on to the main event, ham and swiss on fresh bread that I popped in the oven for a bit.

Later when I got hungry I decided to have even more protein. (Yes, too much leads me to a migraine and yet today was so protein centric but I was craving it- I think that the more of it you eat, the more of it your body thinks it needs even though we, as Americans, definitely eat more protein than necessary).

Aaaaaaanyway, I had green eggs (aka two eggs with pesto whipped in) and an english muffin with blackberry jam.

Breakfast for dinner is the best!

I had a great work day, I love our summer school program.  If I end up staying in the area, I hope I can work with this teacher, he’s amazing and I know I would be so much better prepared for my first solo year under his ‘care’ beforehand.  We took our insects inside yesterday and placed them in a terarium… but the cricket ate them all.  We now have a wild cricket living in his own spot.  A cricket farm (?) that we made out of soda bottles (and that stinks), an ant farm that’s fabulous, and some butterfly larvae.  The kids are so cute, today they focused on doing scientific drawings.  We went from ant pictures wearing stunna shadez to really accurate drawings and the cutest spanish sentences about them.  I’m so proud of our kiddos!

I don’t watch much TV and now I don’t know where the remote is.  It has helped me focus on school (well not really after all there’s always hulu.com) but I will need it after this week because I plan to spend many hours catching up on my DVR… I totally deserve it!

Just a sampling of the highlights 😀

Today, I woke up at 6:49.  I don’t think I’ve ever done that, willingly, on a Sunday… unless it had to do with catching a flight for a vacation.  I just jumped out of bed and started moving.  I took out the trash and recycling, then washed dishes, made breakfast and got to work!

For some reason, I’ve been really craving citrus-y fruits lately.  I’ve been eyeing the lemons in my fridge even!  Cold, orange slices may be my new favorite snack!

Then I made a smoothie because I wasn’t hungry, but I felt empty.  You know?

Chocolate protein, plain soymilk, water, fat free yogurt, half a banana and lots of whirrrring in my blender…  It took me two hours to drink it all and was the perfect thing to have while attempting to get through chapters and chapters of reading.

A few hours later I decided to break for lunch.  I think I ate then more for the break time, than out of hunger.  Oh well.

Turkey, greens and a little olive oil mayo on… waffles?!?!?  Yeah, they are the easiest to defrost from my freezer and lately I can taste freezerburn on my bread and english muffins.  That could just be my imagination but I didn’t feel like dealing with it today.  These wholegrain ‘kids’ waffles had a slight sweetness to them that really complimented the savory tastes of my sandwich.  Yum!

Dinner was comforting all the way.  Summer Squash, Spinach, Tomatoes, a Morningstar Chick’un Tender, a little Pesto and WW Pasta with Fresh Parsley and Pinenuts on top.  It ended up being too much. 😳 So I saved the extra veggies and I’ll use them tomorrow with my dinner (don’t know what that’ll be yet).

Even though dinner was too much, I really wanted something warm and chocolatey… but I didn’t want to break the bank calorically.
