Garlicky Braised Green Beans, or GB2, is one of my favorite side dishes. If you’ve ever had braised brisket and want the flavors without all the fat (not to mention the meat) or just need a complement to a simpler entrée then this is the dish for you 🙂

Simple Ingredients

For 2 Servings:

1 tablespoon Extra Virgin Olive Oil

2 cups of green beans, trimmed

1 medium tomato, seeded and chopped

1 clove garlic, finely trimmed

.5 teaspoon coarse salt (kosher, sea, etc.) or .25 teaspoon table salt

black pepper, to taste

.25 tsp dried oregano

Vegetable broth or water

In a deep skillet with a lid, heat olive oil until glistening. Add green beans, stirring occasionally, until browned.

Once browned, add remaining ingredients, except for liquid:

Now, add a small amount of the liquid, about 2 tablespoons, stir and cover. Continue to check and add more liquid as needed. Continue to do so for 30 to 60 minutes. The longer you let them braise more tender and delicious they will be. As long as you check and stir every 10 to 15 minutes, you’re pretty much done.

The finished product! A well braised dish has a melt in your mouth texture, and this dish certainly does, especially if you let it go for the full hour. I serve it with mashed potatoes or another starch that can absorb the (delicious) sauce that you get. This dish reminds us that when you pick good, simple ingredients you can have an amazing flavorful product without any fuss!
